Moreish donuts - airy, soft and fluffy finished with a Fresh As Passionfruit & Mandarin hit.
Ingredients
- 30g yeast
- 550ml warm milk
- 930g Bakers flour (take 200g to mix with the yeast for the first rise)
- 20g sugar
- 4 eggs
- 180g butter melted
- 1 cup icing sugar
- Fresh As Passionfruit Powder
- Fresh As Mandarin Segments
Method
Pre-heat your fryer to 180°C.
In a bowl dissolve together the yeast, the warm milk, water, sugar, 200g of the flour – whisk to combine. Leave to one side for 10-15 mins until bubbling and active (depending on the temperature of your kitchen).
Add the starter and the rest of the remaining ingredients into a planetary mixing bowl and knead together thoroughly. Either on the bench by hand (for 10-15 mins), or if you have a dough hook – in your mixer (for 5 mins).
Cover with a cloth and leave to double in size.
Divide the dough into even pieces (approx. 110g each). Roll into tight balls and arrange on an oven tray. Cover with a damp cloth again and prove until just risen.
Once the buns have proven, with a damp hand press them flat to halfway, then gently place in the fryer. They will puff up, fry until golden and then using a slotted spoon flip them over and cook the other side, you will see a nice white ring around the circumference of your golden donuts.
When cool, mix Fresh As Passionfruit Powder and icing sugar together. Roll donuts in this mix and sprinkle a crushed Fresh As Mandarin Segment on the top.
Option:
Use Fresh As Dragonfruit Dice crumbled into the icing sugar. Roll donuts in this mix. Top with extra dragonfruit dice.
