Hot Pink Fruit Salad by Ray McVinnie

This fruit salad is all about amazing flavour, delicious texture and intense colour.

The combination of the juicy, palm sugar-sweetened watermelon with the intense Fresh As raspberry and strawberry flavours and colours, and their unique soft but crunchy texture, add up to a show-stopping dish.  (It’s also vegan).

Ingredients:

  •         1.5kg watermelon
  • 100g Thai palm sugar
  • zest and juice of 1 lime
  • 1 tablespoon vodka
  • 22g Fresh As Strawberry slice
  • 30g Fresh As Raspberry whole
  • 400ml coconut cream

 

Directions:

Cut the watermelon off the skin and cut the flesh into 3cm chunks.

Place on a deepish platter.

Finely chop the palm sugar and put it in a small bowl, or put it in a mortar, add the lime juice and vodka and mix or pound until the sugar is dissolved.

Drizzle this over the watermelon.

Sprinkle the strawberries, raspberries and lime zest over the watermelon.

Just before serving drizzle a little coconut cream over the salad and serve the rest in a jug on the side.
